Fortunately, I see a dietitian tomorrow so we can sort this mess out, but there seems to be little rhyme or reason to what makes my blood sugar spike. However, I do know that if I stick to protein and veggies, I seem to do alright. That said, I threw together a mustard crusted tofu over roasted root veggies the other night and it was quite good. It's based on this recipe, though I added the greens, onions, ginger, and lime juice to some leftover roasted root veggies that we got from a dinner a friend made us. Turns out, it was tasty and diabetic friendly!

I'm not too clued up about gestational diabetes - type 1 yes, as this is what mr treehugger has, but gestational, no. Glad to hear you're seeing a dietician about it and hopefully it won't be a problem. Mr treehugger adapted very well (he was diagnosed 3 years ago) and I'm sure you will too.
Oh man, that sucks!!! I hope things go well with the dietician. Does this mean no more dessert????
I hope your trip to the dietician went well. You've undoubtedly learned by now that gestational diabetes happens because your hormones are so screwed up anyway, though genetics and diet are involved.
People who have gestational diabetes, though, have an increased risk for Type 2 later in life.
