Black Bean Salsa

So, last night was our housewarming party and it was a smashing success. A lot of people opted to bring booze instead of trying their hand at vegan fare, but there was still plenty to go around. I think we had about 40 people here--along with 2 dogs that thrilled the cats to no end. Unfortunately, I didn't take any pictures. I just didn't feel like spending the party behind the lens, so there isn't documentation of the food or festivities. But, I did make a spinach, artichoke, and Teese quiche, which turned out edible despite the fact that I completely forgot to add the cornstarch. And, Josh made some delicious black bean salsa.
If he ever gets off his non-blogging ass, he might actually take the time to leave the recipe that goes with this picture...

in college, i took a nutrition class. i was often the only one who'd ask questions about the sources of information in the material we were covering.
since i was the only veg*n one in the class, the teacher often turned to me to ask where i got my protein, etc.
for one assignment, we had to make some food to share. i made up some salsa that i had "developed" on my own, and the only other vegan dish that other students made for that class was salsa, but since it was better than mine, i stopped using my old recipe immediately, and stole this one.

in the interest of continuing to not blog, i'll post the recipe here, in the comments.

ingredients:

--8-10 roma tomatoes with the seeds and water insides removed
--1 bell pepper--de-seeded, de-stemmed, and de-pithed.
--1 onion
--1 bunch of scallions
--1 bunch of cilantro
--hot peppers to taste- i used 5 serrano peppers in this batch.
--5 tomatillos
--2 cans black beans, rinsed and drained
--2 cups frozen white corn
--2 Tb cumin
--2 TB coriander
--juice of one lime

dice the first 7 ingredients as finely as you can. put the results into big bowl. add the beans, corn, spices, and lime juice.

use a large spoon or spatula to stir it all around until it's a consistent mix. (you don't want to get to the bottom of the bowl and find all the onion...)

take 2-3 cups of the mix and blend it or process it until it's mostly liquid. add this back into the bowl, and stir it in again.

you can eat this salsa right away, but it tastes best a few days after having been made, so the flavors can mix and a lot of the water in the veggies sinks to the bottom.

also, this makes a ton of salsa. be prepared to use a large bowl to fit it all in.
